I think of it this way. We poke the universe. It gives back data. We put that data together into a model that will predict the outcome of our next poke.

We choose the simplest model, into which we can arrange all the data because -- why not? We could, in principle, hang onto a geocentric universe with epicycles and teapots, but it would be unnecessarily complicated.
